What a fantastic opportunity to make a healthy meal tonight. We got in around 7p, which is an early night for us right now. We chatted and now it was time to chew.
I was inspired by a dish I attempted to make at a family member’s house who really didn’t want me there cooking. I messed up the beans but the sauce was heavenly.
This time, I made the kitchen my own for a few hours. A friend shared our story with business friend of hers who I had offered some free coaching to in the past. As a result, she made great connections!
We both think each other is wonderful, and when she heard I was sleeping in the car, she offered her empty house for heat and shelter for a few weeks, so I guess you could say we’re house sitting until we figure the next part out.
I, the faith-strong person that I am have bags of seasonings, lotions, soaps, detergent and other household things in the car in hopes of getting a place soon. Nevertheless, we were somewhat prepared for this.
I made a special sauce with rosemary, onions, tomatoes, cayenne pepper, spinach, chickpeas, noodles, thyme, basil and rosemary.
It is delicious! It makes me happy to cook. And, I notice that I have been singing and smiling. All from having a place where you can belt out a note that may or may not crack a window.

You can eat healthy and be full. You can make dishes as you normally would and replace the meat with a bean or vegetable. You will be pleasantly surprised.
I encourage you, and I urge you this Thursday to make a new dish. Think about your taste buds and what you want the meal to taste like. Go for it! Sing to yourself, and enjoy some quality time with YOU! Your family will thank you for it 🙂
